ISO is the sensitivity of your camera available to light. Whenever you put the ISO number on low, its less sensitive to the light. But whenever you put the ISO number on high, the more sensitive it is to the light. You can change the sensitivity with the sensor. The sensor gathers light and transforms it to a image. When its really sensitive, you can capture images when its dark without having to use flash. But when its higher, the image looks ""noisy".
